The first week of our school year came to a close. We survived.
I was really worried we wouldn’t. I mean, I had nightmares the few days before school started. Silly things, really, because what do I have to be nervous about my first week of teaching the kids? I’m my own boss, and if I screw something up, we start again.
I’m thankful and so happy to say that we did make it though, and with flying colors. The kids adjusted to their new curriculum and I didn’t lose it.

Today, I’m sharing with you a unique recipe of ours…apple cornbread. It’s a recipe that sounded peculiar to me. Apples in cornbread? Such an odd combination.
What apples are good for baking?
Normally, I like Granny Smith apples in baking, but in this from scratch cornbread recipe, I prefer a sweeter apple.
Think Gala, Northern Spy, Jonathan, and Honeycrisp. The sweet apples will give a hint of sweetness to the cornbread, while helping to keep the bread super soft and moist.
Apple Cornbread Serving Suggestions
We enjoy the apple cornbread most when it is straight from the oven, but you can eat it cold or at room temperature as well.
It only takes 30 minutes to make, so it’s easy to pop in to bake right before you want to serve it. The apple cornbread recipe yields a small 8×8 pan, so there most likely won’t be any leftovers to deal with.

- 3/4 cup cornmeal
- 3/4 cup all purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1 large egg slightly beaten
- 3/4 cup whole milk*
- 3/4 cup finely grated apples
- 2 tablespoons melted butter
Preheat oven to 400 degrees.
In a bowl, combine the corn meal, flour, baking powder, salt and sugar.
Add beaten egg and milk.
Stir until well blended
Add apples and melted butter. Mix thoroughly.
Pour batter into a greased 8×8 square pan.
Bake at 400 degrees for 18-20 minutes, or until the center is cooked through.
