BABA GHANOUSH



Ingredients

  • 1 large eggplant
  • 1 clove garlic, crushed
  • ½ tsp salt
  • ½ cup tahini
  • ½ tsp cumin
  • 1 tsp lemon juice
  • 1 tbs finely shopped parsley

Instructions

  1. Place eggplant on a wire rack and bake in a 180 degrees
  2. Celsius preheated oven for 1 hour or until skin has wrinkled and eggplant feels soft to touch. Allow to cool.
  3. Peel eggplant. Mash to a pulp and add garlic, salt, tahini, cumin, lemon juice and parsley. Beat to a smooth puree.
