Blueberry Sorbet – Eating Pegan


  • 2 cups blueberries
  • ½ medium banana
  • 1/3 cup coconut milk
  • 1½ tbs honey
  • 1 egg white, beaten until stiff peaks have formed

  1. Using an electric blender, blend together blueberries, banana, coconut milk and honey until well combined.
  2. Fold blueberry mixture into the beaten egg white. Pour into an ice-cream container / freezer proof container and freeze for approximately 6 hours or overnight until set. To serve, cut into slices.
