Lots of people have Christmas traditions. Some people have a special breakfast on Christmas morning, some get together with friends to do some baking or shopping, or maybe your idea of a Christmas tradition over vacation is just sitting around by the fire, half-asleep.
That does sound pretty nice!
One of our family traditions for just about any time is…..Saturday morning pancakes! I know that pancakes sometimes seem like hard work for a Saturday morning, but most of the time, either me or my brother will make a batch of pancakes. I don’t mind making them at all- as long as I get my share. Usually they are eaten faster than they are cooked, so I have to grab some as soon as possible. But I always take the time to put peanut butter and syrup on my pancake and eat it slowly with a glass of milk. I like to enjoy every minute of my delicious Saturday-morning pancakes.
During this time of year, one of our favorite pancakes to make are the Pumpkin Creole Pancakes. It’s just the pumpkin season, ya know? Sometimes, we add chocolate chips, too.
Well, those pancakes are fun, but there needs to be new ones to try-that’s the really fun part! Especially if it’s pancakes. When I tried these mouth-watering treats, I literally thought Christmas. They are soft and light, with a nice ginger flavor. That’s why they are called Gingerbread Pancakes.
These pancakes are really special because they are so simple. So soft, yet so delicious. They are a revised edition of Amish Griddle Cakes, which makes them even better- you know it’s a good recipe when it’s Amish!

The Best Pancake Pan
For beautifully browned pancakes, we love this non-stick pancake griddle! It cooks the pancakes evenly.
- 1 1/3 cups flour
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 3 tablespoons oil
- 1 large egg
- 3/4 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon allspice
- 2 tablespoons molasses
- 1 1/4 cups milk
Whisk all the ingredients just until smooth.
Lightly grease a skillet with cooking spray, butter, or oil.
Fry each pancake over medium-low heat until it is puffy and bubbly, turning to brown on the other side.
Serve hot with butter and your favorite syrup!
