Pumpkin Pie – Eating Pegan


  • 2 cups diced pumpkin
  • 3 eggs
  • 1 cup thick coconut cream
  • 2tsp ground cinnamon
  • 1tsp ground ginger
  • 1tsp ground nutmeg
  • ¼ tsp ground cloves
  • ½ tsp all spice
  • Maple syrup

  1. Pre-heat oven to 180 degrees celsius, fan-forced.
  2. Line a 20cm cake tin with baking paper.
  3. Place all ingredients into a food processor and blend until well combined.
  4. Pour mixture into the cake tin and place in the oven and bake for 40minutes, or until cooked through.
  5. Cool before serving.
