ROAST PUMPKIN ‘HUMMUS’



Ingredients

  • 1 cup pumpkin, diced
  • 1 tbs olive oil
  • ½ cup cashews
  • 1 garlic clove, crushed
  • 1 tbs lemon juice
  • 1 tbs olive oil
  • 1 tsp cumin, ground
  • Dash nutmeg
  • Salt and Pepper

Instructions

  1. Pre-heat oven to 200 degrees Celsius, fan-forced.
  2. In an oven proof dish, place diced pumpkin and 1tbs olive oil.
  3. Bake in oven for 40-60 minutes, or until cooked. Leave to cool.
  4. Place pumpkin in a food processor, along with remaining ingredients. Blend on high speed until a soft creamy texture is formed.
